This cheese has a layer of ash through the center and is lightly washed then wrapped in vine leaves from a neighbouring farm. Several weeks maturing makes for a delicious semi soft cheese with a rich nutty flavour with extra interest on the rind. This is a great example of creative cheese making here in Australia.
