 It’s easy to talk about this in the Deli when it comes up but can I make it work on this platform?  Well I thought I would give it a try! Please let me know how I go!  ‘Testun al Barolo’
By Beppino Occelli in the Lange region of Italy.  This cheese, a mix of cows and goats milk, is aged in wooden barrels containing the grape skins of Barolo wine.  A purple stain results which penetrates the rind of the cheese leaving a very
distinctive colour and wine barrel flavour.  The wheels are then sandwiched with 
Langa marc and soaked in Barolo wine and further aged.  Grapes and cheese mingle to
create a flavour that is bitey, creamy, sweet, winey, buttery and sharp all at once.  And this is just a small part of the story!!!  #mulberrysdeli

Bluing in Cheddar. Just arrived this exceptional Bluing in Cheddar. 
Just arrived this exceptional wheel of Ford Farm Goats milk Cheddar.
@fordfarmcheesemakers  Bluing isn’t just for blue cheese. We often see vibrant streaks of blue shooting through typically non-blue cheeses, 
 These accidentally blue cheeses are completely natural and edible. They’re simply the result of air inadvertently reaching the interior of the cheese and making contact with mould spores naturally present there.  
How? We don’t know for certain. The simplest explanation is that wheels of hard cheese are turned frequently throughout their maturation. If an affineur flips the wheel and bumps it on a shelf, that can introduce microscopic fissures – and potentially, eventually, bluing. The green mould which happily lives in the air of humid, dark environments (like a cave, or a maturation room) gets into the interior of the cheese and proliferates.  
This happens more often to cheeses with a slightly brittle, crumbly texture. British territorials like Cheshire, Wensleydale, Lancashire, and Cheddars are particularly prone to bluing.   
Accidental mould in cheeses can be delicious and is sometimes sought after by customers. Rarities like bluing in non-blue cheeses is one of the things that make handmade cheese so special. Each batch, and even each wheel, will be unique.
